Whole Grain Vegan French Toast

Enjoy this departure from the typically heavy and sugary French Toast! With all natural sweeteners like vanilla extract and bananas, you can satisfy your need for weekend brunch and still feel good about it later. The silken tofu in this recipe helps to add thickness to the batter and a little bit of protein to keep you going. For a delicious treat, top it off with some fresh berries and whipped coconut cream!

Vegan Stuffed Peppers Recipe

These stuffed peppers are a great veggie entrée or side when you’re grilling! Cheesy and savory, both vegans and omnivores are sure to love them. Clean-up is easy for this one too, since all you’re cooking in is a bit of foil. The peppers are surprisingly filling, so you can serve them on their own or cut in half as a side dish; I like to pair them with rice, cous cous or mashed potatoes. As always, feel free to experiment with different sauces, spices and vegetables to make them your own!

Meatless Meats: An Ancient Tradition With Recent Popularity

The first vegan butcher shop has opened in Minneapolis, Minnesota, and has become a popular stop in the area. It is an oxymoron because there are no animal products in the store, yet they sell bologna, ham, chicken and sausage -- all made with wheat gluten, yeast, soy and miso. Owners Aubrey and Kale Walch hand make these vegetable protein items in small batches to ensure freshness. Enjoyed by vegans, vegetarians and carnivores, the products taste like the real thing with the same texture as meat. They also sell deli meats and cheeses -- all vegan and tasty.

Healthy Dish: Vegetarian Black Bean & Potato Enchiladas

I’ve always loved enchiladas because they’re a quick alternative to other typical weeknight Mexican dishes such as tacos or chili. My mom used to make a version of these enchiladas with chicken, but I’ve since turned the recipe into a vegetarian option with a variety of flavors and textures.

Portobello Mushroom Steaks (Vegan Recipe)

These Portobello mushroom “steaks” are meatless and can be used in a wide variety of dishes. Their versatility makes them great for experimenting with different combinations of spices and sauces, so feel free to put your own spin on it and try some new things!
