This parfait is a nice light treat to enjoy after a big meal! The balance of cool creamy coconut, rich chocolate pudding and chewy granola combine to create a blend of flavors and textures that are unlike any other dessert. With easy ingredients and minimal preparation, no one will ever know that you spent less than hour making this from scratch. Serve it in a tall glass for a fancy affair where you are sure to impress!
Chocolate Pudding Parfait (Vegan)
*Serves 2-4
Ingredients:
1 cup Coconut Cream (chilled)
1/2 cup Powdered Sugar
1/2 cup Strawberries or Raspberries (cut in half)
1/2 cup Granola of your choice
1 cup Chocolate Avocado pudding (recipe can be found here: http://basmati.com/2016/10/11/recipe-chocolate-avocado-pudding-vegan)
Directions:
-Prepare the Chocolate Avocado Pudding ahead of time.
-Cut your strawberries and/or raspberries in half.
-Spoon out the thick, stiff part of the chilled coconut cream and put it in a medium bowl. Add the powdered sugar and mix well. This will be our whipped cream.
-Using a small glass, spoon the chocolate pudding into the bottom of the glass and then top with a layer of coconut whipped cream and then granola. Add some of the fruit pieces on top of the granola and continue to layer in this order until you have filled the glass.
-Serve chilled.
