Vegan Chocolate Mug Cake

This is one of my favorite dessert recipes because it’s so quick, easy and fun to make. Treat yourself with a single serving of moist chocolate cake that you can whip up in only five minutes and even eat in the same container that you cooked it in! If you want to make multiple servings or one larger cake, simply use the same ingredients in larger portions.

Vegan Meal Planning: A Day's Worth Of Recipes (Day 1)

Do you ever have trouble planning out meals and pairing foods? I know I do! In an effort to make that planning a little easier, I put together some of my recipes into a full day eating plan for vegan meals! Whether you’re cooking for one, two or maybe a few more, these meal ideas will help you prepare a winning combination every time.

Eat Sustainably Sourced Meat—It’s Better for Our Food System Than You Think

Contrary to popular belief, recent research shows that eating sustainably sourced meat is not taboo. In fact, eliminating meat from our food system could actually be unsustainable.

Whole Grain Vegan French Toast

Enjoy this departure from the typically heavy and sugary French Toast! With all natural sweeteners like vanilla extract and bananas, you can satisfy your need for weekend brunch and still feel good about it later. The silken tofu in this recipe helps to add thickness to the batter and a little bit of protein to keep you going. For a delicious treat, top it off with some fresh berries and whipped coconut cream!

Vegan Stuffed Peppers Recipe

These stuffed peppers are a great veggie entrée or side when you’re grilling! Cheesy and savory, both vegans and omnivores are sure to love them. Clean-up is easy for this one too, since all you’re cooking in is a bit of foil. The peppers are surprisingly filling, so you can serve them on their own or cut in half as a side dish; I like to pair them with rice, cous cous or mashed potatoes. As always, feel free to experiment with different sauces, spices and vegetables to make them your own!

Easy, Healthy Lunch: Hummus & Veggie Sandwich (Vegan)

Summer Recipe: Vegan Yogurt Pops

Vegan Yogurt Pops

Serves 8

Time to cool off with some fruity yogurt pops! Quick and easy, you can mostly use ingredients that you already have in the fridge. You can even use a cupcake pan if you have one laying around and don’t want to use paper cups. Feel free to experiment with various types of fruit for some fun colors and flavors that are sure to please on a hot summer day in the park or by the pool.

2 cups sliced strawberries

Plant-Based Zucchini Bread Recipe

This zucchini bread is a delicious treat that both vegans and omnivores will enjoy. Moist on the inside and chewy on the outside, there are subtle notes of cinnamon and vanilla that pairs well with your afternoon coffee and a good book in the sunshine.

Since zucchini is a summer squash, this recipe is perfect for the months of June-August when you have an excess of zucchini needing to be harvested in the garden, or when they show up fresh at the market. As a plus, you can even use those overripe bananas that have been sitting on the counter a little too long!
