Vegan Meal Planning: A Day's Worth Of Recipes (Day 1)

Do you ever have trouble planning out meals and pairing foods? I know I do! In an effort to make that planning a little easier, I put together some of my recipes into a full day eating plan for vegan meals! Whether you’re cooking for one, two or maybe a few more, these meal ideas will help you prepare a winning combination every time.


Breakfast:  Whole Wheat French Toast Accompanied by Healthy Chocolate Smoothie

At first glance, having French Toast and a Chocolate Smoothie in the same meal might seem overly sweet and indulgent. However, each of these recipes has toned down the sugar and amped up the nutrients, making them a great way to start the day and treat yourself! See links below:


Lunch: Hummus & Veggie Sandwich Accompanied by Hearty Vegetable Soup

This hummus sandwich is light enough that you can still leave room for a cup of my hearty vegetable soup! You will be sure to get a full serving of veggies eating these two together and the hummus provides a bit of protein to carry you through the afternoon.


Dinner: Portobello Mushroom Steaks Accompanied by Mashed Sweet Potatoes with Cauliflower

This dinner is packed full of vitamins, minerals and fiber! The chewy Portobello Mushroom Steaks complement the mashed sweet potatoes very nicely. With their contrasting texture and complex mix of flavors, the mushrooms stand out against the sweet potatoes; however, the nature of both dishes is distinctly savory which allows them to be eaten together in harmony despite their delicious differences.
