Recipe: Socca, (Chickpea Flour Pancake)

Life on the French Riviera is not only gorgeous, but also quite delicious. My partner and I live in Nice, which is just a short (beautiful!) drive from Italy. A metropolitan hub with an airport on the Mediterranean Sea, Nice has always been a natural melting pot for a diversity of cultures. As a result, it is difficult to find traditional French dishes when one goes out in Nice for a bite to eat.

Try Juicing This: Bitter Melon

Have you ever heard of bitter melon? This highly-medicinal fruit-vegetable hybrid is beneficial when eaten raw or juiced.

Bitter melon sure is pretty, but looks can be very deceiving. When eaten raw, bitter melon has a taste that can only be described as well, bitter — with a hint of cabbage. Doesn’t sound too appetizing, does it? Well, I was willing to look past the awful taste in order to get some of that bitter, bitter nectar in my body. It’s often the most awful tasting foods that end up being the best for you.

5 Foods to Beat Belly Bloat

It’s fall—those skinny jeans you have such a love/hate relationship with are just begging to be worn. If you attempt to slip back into them, but find that you just can’t seem to close that button, you could be bloated. Whether the holiday feasts are leaving you too full, or it’s that time of the month, bloat happens. If feeling like a balloon that’s ready to burst isn’t quite your thing, eat these five foods to avoid that unwelcome, uncomfortable belly bloat.

Veggies: What's Better - Fresh or Frozen?

The best way to eat produce is freshly picked off the vine from your garden or local farmer’s market. Unfortunately, not everyone has that luxury. For most of us, our produce comes from the nearest grocery store. We sift through the fruits and vegetables as we choose the cream of the crop. The frozen aisle is avoided because fresh is best. That's what I thought, anyway, until I decided to dig a little deeper into the freezer section.

Off-Grid Cooking: Triple Threat Mac and Cheese

I know I am not alone when it comes to my love of baked macaroni and cheese. Don’t allow camping trips or off-grid living to take away the pleasure of cooking. A Dutch oven solves your baking issue (as long as you have a nice heaping pile of burning hot coals). Simply place your Dutch oven on top of the pile of coals and use a shovel to pile more coals over the Dutch oven so that it’s completely covered. While your meal is baking, feel free to complete other chores or enjoy the outdoors – just don’t go too far: Smokey the Bear is always watching!

Living Off The Grid: Foraging For Beginners (Part 3) Spring

The arrival of the Spring Equinox is very exciting for foragers. We watch as the snow begins to melt away, looking for any signs of plant life. Our eyes scan looking for bright baby green shoots and any sign of blooming color.

Spring’s bounty can be incredible if you know what to look for and where to find it. As we walk through spring’s edibles, I will show you some of the more basic plants to locate, identify, and harvest. It is difficult to choose just a few to fit within these pages, because there are books’ worth of information on the food in different areas.

Cracking the Egg Label Code

Eggs - they are simple, nutritious and come in their own natural shipping container.

So how did they become so complicated?

All natural, free-range, humanely raised, pasture-raised - it is confusing! If you are not able to raise your own hens, then how do you buy the best eggs? Sometimes you stare at the choices so long you just decide to go with the least expensive carton and move on.

Let's take a look at what those labels really mean:
