This caramel recipe is creamy, buttery and totally vegan! The possibilities are endless: you can dip apples in it for a chewy treat, eat small pieces of caramel on its own, or drizzle over your favorite dessert to make it that much sweeter. Whatever you use it for, this caramel is sure to please even the pickiest person in your household this holiday season.
Ingredients:
1 cup Vegan Butter
2 cups Sugar
2 cups Soy Milk
1 cup Light Corn Syrup
1 teaspoon Vanilla
Directions:
-Prepare a medium baking sheet by covering it with wax paper.
-Put all the ingredients (except for Vanilla) in a large saucepan and put over high heat until it boils, stirring often.
-Turn the heat down to medium and continue to cook until the caramel becomes a thick consistency and a golden brown color.
-Remove from heat and stir in the Vanilla.
-Pour the caramel onto the baking sheet and allow to cool.
-Once caramel is completely cool, cut it into small pieces.
Enjoy on its own or as part of a decadent dessert!
