Vegan Gingersnap Cookies

Ginger cookies are my favorite treat to make around the holidays! With their spicy flavors and chewy consistency, they make a perfect dessert to enjoy while you decorate the house or wrap gifts. The applesauce stands in for eggs and adds some moisture, while the dark molasses adds a nice richness of flavor that you won’t find in very many cookie recipes. Happy Holidays!

Vegan Gingersnap Cookies

Makes about 24 cookies

Ingredients:

2 cups Flour

1 Tablespoon Ground Ginger

1 teaspoon Ground Cinnamon

Beets are one vegetable for which I will always reach, and so I find ways to incorporate them into classics…like this bright and beautiful beet ginger hummus, pulsing with warming, slightly spicy flavors I love. This recipe is awesome not just for the flavor, but because it brings some real vibrant color into the kitchen during the winter season. It reminds me of the strong magenta of a peony or a really rich summer fruit, and the ginger in it warms like the feeling of summer sunlight. It’s delightful!
