An empanada is basically a little pie that is fried or baked. These hand-held pies are delicious and there is no limit to what you can fill them with.

Empanadas are suitable for any meal and also make awesome snacks. Let’s talk about the dough before we get onto the unlimited world of filling.

Empanada Dough

3 Cups Flour

1 Teaspoon Sea Salt

1 Large Egg

1 Egg White

1 Teaspoon Vinegar

½ Cup Very Cold Water

3 Tablespoons Shortening

With the sugar-filled holiday, Halloween now in the past it can be a struggle to get the little ones to want to eat ANYTHING but candy.

Fruit leathers are a healthier, sweet, candy-like snack that are actually kind of good for the kids. It’s always fun to have the kids help with this recipe, and then they will know one of the ways of making Real Candy. When I was a little girl my Abuelita (Grandmother) would always give me candied fruits and fruit leathers instead of sugar filled candy.

Off-Grid Cooking: Brick Oven Tomato Basil Pesto Pizza

I have tried many different pizzas in my lifetime but my favorite is made in a brick oven; brick oven pizza is just amazing! Today I want to share with you this delicious recipe, including instructions on using the brick oven. Tip: make sure you get the fire in the oven going for about 2-3 hours before cooking.  Also, the pizza stone must sit in the oven for an hour before baking.
