Easy Mushroom Gravy (Vegan)
*Makes about 4 servings
This easy mushroom gravy is quick and only requires a few simple ingredients to make it! Any mushroom can be used, though I recommend Cremini mushrooms. The mushrooms, red wine and soy sauce blend together to create a deliciously complex and savory flavor profile. This gravy is creamy, earthy and well-balanced, making it the perfect complement to your mashed potatoes, biscuits or another main dish.
Ingredients:
1 cup chopped mushrooms
¼ cup vegetable oil
¼ cup chopped green onion
¼ cup red wine
1/3 cup all-purpose flour
2 cups mushroom broth
1 cup almond milk (or any non-dairy milk)
1 Tablespoon soy sauce
Salt & Pepper to taste
Directions:
-Heat the mushrooms in a large saucepan with vegetable oil. Add salt and pepper to taste.
-Once the mushrooms have been simmering for about 2 minutes and become softened, add the green onion.
-Pour in the red wine and cook until it is almost evaporated (about 1 minute) before sprinkling the flour into the pan, stirring regularly.
-Whisk in the mushroom broth, soy sauce and almond milk, stirring constantly until the liquid has thickened (about 3 minutes).
-Serve warm over your favorite dish!
