Raita is a simple, quick dish that can be enjoyed as flavorful dip or a salad. Raita can also be used as a side with any rice dishes or can be enjoyed as the main course.
The cucumber helps to reduce the aggravated Pitta dosha. It is a very cooling recipe for the Summer.
1 small grated cucumber
1 cup plain, whole-milk yogurt/low-fat yogurt (Greek or Indian yogurt suggested)
2 tablespoons chopped fresh cilantro leaves (can even use mint leaves)
A pinch or more of cumin powder
Salt to taste
In a bowl, whisk yogurt until it is smooth.
Add in grated cucumber, cumin powder, salt and coriander or mint leaves.
This cooling dish can be enjoyed as a snack or for lunch, but Ayurveda recommends not consuming this dish for dinner as the yogurt is heavy to digest.
